VEGGIES AND FETA DIP
This recipe is what you were waiting for, to make the best of your old, sad vegetables back in the fridge! No waste-maximum flavour!
Ingredients:
Technically, you can use all remaining, or going-to-go-bad veggies in your fridge.
We used
- 30 cherry tomatoes
- 2 1/2 red bell peppers
- 1 eggplant
- 1/2 courgette
- Vendema EVOO for sauté-ing and drizzling
- dried oregano
- crispy chilly oil on top
- salt and pepper
For the feta dip:
- 200gr greek yogurt
- 300gr feta cheese
Do the magic:
Simply chop and sauté your veggies in medium heat, lathered in Vendema EVOO. They'll need about 20 minutes to get soft and caramelized.
Meanwhile get your feta dip ingredients in your food processor, and blitz into a cream.
Serve the veggies over the dip, along with toasted bread, as a perfect appetizer!
