The Chicken Salad

This is the recipe you didn't know you needed, but you won't be able to live without!

Perfect for your Sunday table, or for these times that you're reaching for a nourishing, balanced healthy meal that has it all.

Ingredients:

1 chunky iceberg

3-4 spring onions

1 radish

1/2 bunch of dill

1 fresh juicy lemon

60gr feta cheese

20gr Vendema Organic Extra Virgin Olive Oil 

Pinch of salt and pepper

 

For the chicken:

300gr chicken breast or thigh

Pinch of salt, pepper, paprika, garlic, oregano and turmeric

Splash of Vendema Extra Virgin Olive Oil

 

Do the magic:

Preheat your oven at 200C.

Marinate your chicken in all of its spices and a splash of your Vendema EVOO and set it aside as long as your oven preheats.

Grill your chicken for 15-20 mins, for it to remain juicy.

Cut and mix all your veggies, sprinkle with feta cheese, salt and pepper, place your chicken on top and drizzle generously with the lemon and your VENDEMA Evoo.
