Autumn on a Plate: 5 Vibrant Recipes to Celebrate the Good Harvest
There is a distinct shift that happens when autumn arrives. The air crisps up, the evening light softens into a warm golden hue, and our kitchens naturally become the heart of the home once again.
In Greece, this time of year brings a special kind of energy. It is a period of reflection, gratitude, and anticipation for the coming harvest.
At Vendema, we live for this connection to the land. The word Vendema itself means the good harvest—a celebration of hard work, ideal weather, and the liquid gold that graces our tables.
For too long, seasonal cooking has been weighed down by the misconception that autumn and winter food must be heavy, dull, and brown. We are here to change that narrative. We believe your autumn table should be just as loud, colorful, and expressive as a Mediterranean summer.
This season, we are choosing the earthy, sweet, and robust profiles of autumn’s best vegetables. From deep orange pumpkins to vibrant purple beets and crisp brussels sprouts, these five recipes will elevate your cool-weather cooking.
The Anatomy of a Sexy Autumn Pantry
Before we light the stove, let’s talk about the foundations of flavor. True luxury lies in simplicity, but simplicity demands flawless ingredients. When you build a dish around seasonal produce, your choice of fat and seasoning isn't just an afterthought—it is the element that ties the entire plate together.
By stocking your pantry with high-quality, high-phenolic extra virgin olive oil, you give simple vegetables a gourmet edge. Let’s put these products to work with five stunning autumn recipes.
1. Charred Smashed Beets with Whipped Feta
Beets are the ultimate unsung heroes of the autumn harvest. Jewel-toned, deeply sweet, and beautifully earthy, they offer a sensory experience that matches the bold, vibrant aesthetic we love. By boiling them until tender, crushing them, and roasting them at a high temperature, the natural sugars caramelize against the crisp edges. Paired with a sharp, umami-rich whipped feta base, this dish balances sweetness, salt, and fat beautifully.
The Details
- Prep time: 20 minutes
- Cook time: 45 minutes
-
Servings: 4 as an appetizer
Ingredients:
- 6 medium whole beetroots (stems removed, washed thoroughly)
- 3 tbsp Greek Extra Virgin Olive Oil EVOO • The Princess
- 1 tbsp fresh thyme leaves
- Sea salt flakes and freshly cracked black pepper
- 150g high-quality Greek feta cheese
-
2 tbsp Greek yogurt (full fat)
- A handful of toasted walnuts, roughly chopped
- Fresh mint leaves for garnish
Do the magic:
- Prepare the Beets: Place the whole, unpeeled beets in a large pot of salted water. Bring to a boil and cook for roughly 25 to 30 minutes, or until a knife easily pierces the center. Drain and let them cool enough to handle. Using a paper towel, gently rub the skins off—they should slide off effortlessly.
- Smash and Roast: Preheat your oven to 220°C (425°F). Line a large baking sheet with parchment paper. Place the peeled beets on the sheet, leaving ample space between them. Using the flat bottom of a sturdy glass or a potato masher, gently press down on each beet until it flattens and cracks open but stays intact.
- Season Generously: Drizzle the smashed beets liberally with The Princess EVOO. The oil will pool in the nooks and crannies, ensuring maximum crispiness. Scatter the fresh thyme, sea salt, and black pepper over the top. Roast in the oven for 20 minutes until the edges are beautifully charred and crispy.
- Whip the Base: While the beets are roasting, prepare the cream base. In a food processor, combine the feta cheese, Greek yogurt. Blend until completely smooth and velvety.
- Garnish with chopped toasted walnuts for crunch, fresh mint for brightness, and one final, luxurious thread of The Princess EVOO right before serving.
2. Velvet Roasted Pumpkin Soup with The Kween Olive Oil Drizzle
Nothing says autumn comfort quite like pumpkin soup. However, too many pumpkin soups turn out bland, baby-food-adjacent, or overwhelmingly sweet. Our version relies on dry-roasting the pumpkin to concentrate its natural sugars, skipping the heavy cream in favor of an emulsion made with our robust organic extra virgin olive oil. It is clean, silky, and carries a peppery kick that wakes up the palate.
The Details

Do the magic:

Cut your figs in thin pieces, and assemble your salad, adding your olives on top.
4. Crispy Roasted Brussels Sprouts with Olive-Garlic Glaze
Brussels sprouts often get a bad reputation because they are easily overcooked into mush. We are completely reinventing them here. By roasting them cut-side down on a screaming hot pan, the outer leaves turn into paper-thin, crispy chips while the centers stay tender. The real magic happens immediately after they leave the oven, when they get tossed in a glossy, punchy glaze made from our rich olive paste, fresh lemon juice, and a bite of garlic.
The Details
- Prep time: 15 minutes
- Cook time: 25 minutes
-
Servings: 4 as a side dish
Ingredients
- 500g fresh Brussels sprouts (trimmed and cut in half lengthwise)
- 3 tbsp Organic Greek Extra Virgin Olive Oil EVOO 500ml • The Kween
- 1.5 tbsp Greek Kalamata Olive Paste with EVOO • The Nibble Empress
- 2 cloves garlic, finely grated or minced
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- Sea salt flakes and freshly cracked black pepper
- 20g grated pecorino romano or vegan parmesan (optional)
- Red pepper flakes for an extra kick
Do the magic:
- Prep the Pan: Preheat your oven to 220°C (425°F). Place a large, rimmed baking sheet inside the oven while it preheats. Heating the pan beforehand is the secret to getting an instant, gorgeous sear on the sprouts.
- Coat the Sprouts: In a large bowl, toss the halved Brussels sprouts with The Kween Organic EVOO, sea salt, and black pepper. Ensure every single sprout is glistening with oil so they crisp up evenly rather than steaming.
- The Sear Factor: Carefully pull the hot baking sheet out of the oven. Arrange the sprouts on the sheet, placing every single one cut-side down. Roast for 20 to 25 minutes without flipping them, until the undersides are deeply browned and charred.
- Whisk the Glaze: While the sprouts are roasting, whisk together The Nibble Empress Olive Paste, minced garlic, fresh lemon juice, and lemon zest in the bottom of a large wooden serving bowl until it forms a smooth emulsion.
- Toss and Glaze: As soon as the sprouts come out of the oven, dump them directly into the serving bowl with the olive-garlic glaze. Toss vigorously while they are piping hot; the residual heat will cook the raw garlic slightly and cause the sprouts to absorb the glaze deeply.
- The Sexy Finish: Plate the glazed sprouts onto your Yellow Ceramic Dinner Plate. Top with a sprinkle of grated cheese, red pepper flakes, and any crispy loose leaves left behind on the baking sheet.
5. Savory Cauliflower Steaks with Olive Paste Tapenade & Pomegranate
Cauliflower is the ultimate canvas for bold, expressive Mediterranean flavors. Instead of chopping it into tiny florets, cutting the head into thick, substantial "steaks" gives this humble autumn vegetable center-stage status. We brush them with our balanced olive oil, roast them until they are gilded and nutty, and then top them with a vibrant, jewel-toned chunky tapenade that turns every bite into an absolute flavor bomb.
The Details
- Prep time: 15 minutes
- Cook time: 30 minutes
- Servings: 2 to 3 as a main, 4 as a side
Ingredients
- 1 large, tight head of cauliflower (leaves trimmed, stem left intact)
- 4 tbsp Greek Extra Virgin Olive Oil EVOO 500ml • The Princess (divided)
- 1 tsp smoked paprika
-
1/2 tsp ground cumin
- 1 tbsp Greek Kalamata Olive Paste with EVOO • The Nibble Empress
- A handful of fresh flat-leaf parsley, finely chopped
- 3 tbsp toasted pine nuts
- 1/4 cup fresh pomegranate seeds
- Flaky sea salt
Do the magic:
- Slice the Steaks: Preheat your oven to 200°C (400°F). Slice the cauliflower directly down the center through the core. Cut two to three 2cm-thick "steaks" from the middle sections. Save any loose florets that break off to roast right alongside the steaks!
- Season and Paint: In a small bowl, mix 3 tablespoons of The Princess EVOO with the smoked paprika, cumin, and a pinch of salt. Place the cauliflower steaks on a large parchment-lined baking sheet and brush both sides generously with the spiced oil mixture.
- Roast to Gold: Transfer to the oven and roast for 15 minutes. Carefully flip the steaks over using a wide spatula and roast for an additional 12 to 15 minutes, until the edges are golden-brown and the stems are easily pierced with a fork.
- Build the Tapenade: While the cauliflower cooks, assemble your fresh rustic topping. In a small bowl, combine The Nibble Empress Olive Paste, chopped parsley, toasted pine nuts, and the remaining tablespoon of The Princess EVOO. Mix until combined.
- The Sexy Finish: Spoon the savory olive tapenade generously down the center of each steak. Scatter the bright crimson pomegranate seeds over the top for a sweet pop of crunch, and finish with a light dusting of flaky sea salt.
