Tomato and feta galette

This one's a favourite!

Star of the show in every dinner party, festive or not, I guarantee you that this galette will be the first platter to empty. 

Ingredients:

For the dough:

110gr butter

170gr all purpose flour

20gr milk of your choice

Spoonfull of vinegar

Pinch of salt

 

For the filling:

3 medium tomatoes

300gr feta or vegan white cheese

40gr Vendema EVOO

Pinch of oregano, salt and pepper

10 cherry tomatos

 

Do the magic:

Preheat your oven at 200C.

For the galette dough simply compine all your ingredients and mix until they come together in a dough-it won't need more than 2-3 minutes. Put it in the fridge to set for 30 minutes or in the freezer for 15'.

For the filling, simply chop your tomatoes and remove the seedy part, break the cheese and combine everything.

Open up your dough into a relatively thin, 1cm layer larger than your tray, place it over your slightly oiled tray, throw your filing in, and tuck in the edges. Top up with your halved cherry tomatoes and bake for 45 minutes.

Let it cool for about 30 minutes and enjoy!
