The Absolute Bean Salad

It's super light, vegeterian or vegan, the cheese choice is up to you, super rich in fiber, super high in plant-based protein and super easy for meal prep.

So good you'll be wondering where has it BEAN all your life.

Ingredients: (serves 2)

  • A cup of boiled assorted beans, we used a mix of white, red, black and black eyed peas
  • 15 cherry tomatoes
  • 1 persian cucumber
  • 1 red onion
  • 1 carrot
  • 1/2 pomegranate
  • 80gr canned sweet corn
  • 100gr feta cheese/plant based white cheese
  • a handful of parsley

For the dressing:

  • 40 gr Vendema Organic Extra Virgin Olive Oil
  • 20 gr Dijon mustard
  • Juice and zest from 1 lemon
  • Pinch of dried oregano
  • Salt and pepper to taste

Do the magic:

In your serving bowl, add straight away al the dressing ingredients and mix well. Throw in all your other bits, give your salad a good mix and sprinkle with some extra Vendema Organic on top.
